The Extra Dry with 15,5 grammes / litre residual sugar, is the “classic” Prosecco. It makes the perfect aperitif, and pairs well with vegetable soups, lightly-sauced pasta, seafood, white meats, and fresh cheese. The colour is a brilliant straw-yellow, and on the nose, the bouquet is fresh and complex, with hints of flowers and notes of apple, pear, and citrus fruit. On the palate it is velvety, dry and rich.
The Brut with lower residual sugar of 9 grammes/litre, is the epitome of sparkling wines. With more prominent bubbles and a very clean nose rich in citrus fruit and vegetable notes, it displays pleasant hints of bread crust.
The Tranquillo or Still, is the least known version of Prosecco. It is made with ripened grapes with a brief skin maceration that adds flavour and complexity to the wine |
